Carrot Eggs
I thought my first recipe should celebrate the rabbit in me.
My mom came up with this recipe - it's easy and amazingly taste like carrot cake minus the carbo! Fast to prepare and I guess great meal for kids.
To serve 4 (that's the number of people in my family)
Ingredients:
1. Medium size carrot -Shredded. My mom cuts it - me, I shred it. Not too finely though or else there's not much texture - shouldn't turn out like a paste.
2. Garlic - chopped finely. ( I like garlic, I put lots - but for the vampires and alike, you may add a little)
3. 3 eggs beaten. (add some fish soy + pepper to it and beat it)
4. some prawns shelled and diced into bite sized (optional)
COOKING:
Heat oil in wok, add in garlic.
When garlic turns brown, add in the shredded carrots and stir fry them. Probably take about 4 mins or so.
Add prawns (optional) and stir fry for 30 seconds or so and pour in egg.
Fry eggs till golden.
Strange that it taste like carrot cake. For adults pleasure you may wanna add some preserved radish when you fry the carrots for that ultimate no carbohydrates dish. Taste best with plain porridge.

The closest thing in my heart would be my tummy
My mom's a great cook. My memories of childhood are never far away from the kitchen. The aroma of the kitchen, the wonders of the meals prepared by the most humble ingredients. Food perked me up and it's my mom's great way of showing her love for me.
I don't think I could leave much for my kids (currently stand at 1, although I would love a field of bunnies), I thought of keeping something for my offsprings to remember me by in the days to come. I've seen my friends blogging - letters to their children and I don't think I could do that - I need something closer to my heart.
Food O Glorious Food. I think I shall just start by documenting the food I've cooked for my offsprings- things that came with approving thumbs up. One day, when the wind blows and they want a taste of love, they can come to this blog and cook it for themselves.
